Description
Traditional British dishes for the win
Ingredients
- 4 oz plain flour
- 2 large eggs
- 150 ml milk
- 150 ml water
- 6 sausages of your choice
- salt and pepper
- herbs
Instructions
Turn on the oven to about 180/200°C, make sure the oven shelf is at the bottom.
Whisk together the flour and eggs, add half the water and half the milk and whisk until mixed well. Add salt and pepper and 'herbs'. I have used a variety depending on the type of sausages I'm using. Sage and Thyme work well with the 'traditional bangers' they sell in our supermarche.
Cover the batter mix and put to one side. Put the sausages in an ovenproof dish (quite a big ovenproof dish) and bake for about 30 minutes. During this time, poke a small mammal with a stick. Also turn the sausages occasionally.
Return to the kitchen.
Pour some oil in with the sausages. Turn the oven up -really- high. This is what the original recipe said. It turns out though, that there is a too high. 300°C is too high. 280°C is probably what you want to aim for.
When the oven is heated (the oil should be smoking), add the rest of the milk and water to the batter mix and whisk. You really do want to do this just before you put it in the oven, otherwise the yorkshire just gets too damn stodgy.
Pour the batter mix into the dish with the oil and the sausages. Put on the bottom shelf of the oven and bake for 25 minutes. You're not supposed to open the oven or the yorkshire will deflate. I stand by this wisdom.
Notes
This really is a meal in itself. It serves us two, but would probably serve a family of four if I'm honest. Wholegrain mustard, onion gravy, steamed veg and a beer. Awesome.
