Description
Classic coffee cake recipe can be tweaked with a dash of Tia Maria or rum to the mix and icing.
Ingredients
- 220 g self-raising flour
- 420 g butter
- 220 g demerara sugar
- 4 eggs
- 20 walnut halves
- 2 t instant coffee
- ds camp coffee essence
- 200 g icing sugar
- 2 dr vanilla essence
Instructions
Sponge:
Preheat the oven to 180C. Line and grease two 20cm sandwich tins.
Mix the flour, sugar and 220g of the butter until it has a breadcrumb like texture. Dissolve the coffee power in a several tablespoons of hot water and add to the cake mix along with the beaten eggs and a dash of Camp Coffee essence.
Toast the walnuts, crumble half of them and add into the cake mix. Divide the mix between the two tins and bake for thirty minutes or until a skewer comes out of the sponge cleanly. Turn the sponge halves out onto a wire rack to cool.
Icing:
Sift the icing sugar and blend with the remaining butter, a dash of the Camp Coffee essence and the vanilla essence. Add the remaining walnut halves to the top of the iced cake.
I am totally trying this out next week, just one thing though, I've not seen 'camp coffee' here, can you think of anything that could substitute, or any other name I might be able to get it under?

Submitted by InitialBlue on Sat, 16/08/2008 - 4:19pm.if all it is, is 'sugar, water, chicory (26%), coffee (4%)' I should probably focus on getting hold of some chicory- a much more common ingredient!

Submitted by dee on Mon, 18/08/2008 - 8:55am.I bet if you could get you hands on one of those sugar / water IV bags, stir in a cup of black coffee and a bit of chicory essence you'd be made. With my genius idea you could even put a hook into your kitchen ceiling to hang it and a little tap on the other end and you'd have Camp Coffee to hand whenever you needed it! ^_^
