Description
Tasty fudgy chocolate brownies that aren't too much like the other stupid ones.
Ingredients
- 150 g slightly salted butter
- 150 g dark chocolate (at least 70% cocoa)
- 225 g dark, soft, brown sugar
- 3 medium eggs
- 1 t vanilla extract
- 90 g whole plain flour
- t baking powder
- 100 g shelled pecans, broken
Instructions
Cut the butter and chocolate into chunks and melt together. I do this in the traditional, pyrex jug in pan of heated water technique. None of Delia's crazy 'ensure that chocolate does not touch the sides of the jug, and that water is precisely 72.8°C' crap. Cool until tepid.
Pre-heat the oven to 190°C. Line the base of a shallow baking tin with greaseproof paper.
Beat the sugar, eggs and vanilla together until frothy. Mix together the flour and baking powder in another bowl (this recipe is not friendly to those hoping for minimal washing up). Beat the chocolate mixture into the egg mixture. Then add the flour and pecan pieces.
Pour the mixture into the tin and bake for 15 minutes, until a crust forms. Remove from the oven and cool in the tin. Once cooled, chill.
Notes
These are well tasty. I have replaced the pecans with walnuts in the past for a slightly less sweet version. I want to try raspberries but haven't yet.
They are sometimes a little runny on the inside. I haven't located the reason for this yet, but once they are chilled this seems to not be a problem due to the wonders of solidification.
